Pork-and-Fennel Sausage Baked Ziti

Baked ziti deserves a better rep. We gave it a makeover with sausage we make in our kitchen, a quick and simple roasted garlic tomato sauce, and two (!) fresh cheeses baked together into creamy, comforting bliss.

Ingredients Included

  • Crushed tomato with basil
  • Fresh ricotta
  • Shredded mozzarella
  • Roasted garlic
  • Dry penne
  • Pinch of parsley
  • House-made pork sausage
  • ½ spring greens
  • ½ dressing

You'll Need

  • Salt
  • Black pepper
  • Olive oil

Step 1

Preheat oven to 375°F. Bring a pot of salted water to a boil, and cook half of the package of pasta for 10 minutes, until al dente. (One minute less than package suggests, so it is slightly undercooked.)

Step 2

While the pasta is cooking, heat a large oven-safe fry pan or wide dutch oven over medium heat (you’ll need a pan large enough to hold all the pasta and sauce). Add Italian sausage, breaking it apart with a spoon, and fry until browned, 3-5 minutes.

Step 3

Once sausage is cooked, add the entire can of crushed tomatoes to the same pan and simmer for 5 minutes.

Step 4

Turn heat down to low and add cooked pasta, shredded mozzarella, ricotta, and a good pinch of salt and black pepper. Stir together to incorporate.

Step 5

Bake for 15-20 minutes, until the cheese and sauce are bubbling!

Step 6

Roughly chop parsley and sprinkle over ziti to serve.

Pair With

½ spring green salad mix ½ lemon vinaigrette
