The Slanted Door's Vegan Mushroom Tofu Pho Kit was created to fulfill the needs of the increasing amount of people turning towards a plant-based diet. They wanted to make a vegan pho that could stand up to the popular chicken and beef versions. This pho has a rich mushroom flavor and pairs texturally well with kale and tofu.
1. In a small pot, bring water to a boil.
2. Take the pho bag and dip it into boiling water for a few seconds, to melt any fat from the bag. Pour the bag into a separate pot and bring it to a boil. 3. Add noodles and stir for about 10 seconds and drain well. Place into a serving bowl with kale. Pour hot pho over cooked noodles and kale. Garnish as desired with the accompanying accouterments.
