Tender slow-cooked beef, simmered in spices and chilies, is folded into corn tortillas with melted cheese and cooked until crispy. Serve with the flavorful consomé beef broth on the side for dipping. The richness of birria goes perfectly with a sprinkling of cilantro and a squeeze of fresh lime, but feel free to add your favorite taco toppings as well.

What You'll Need
Olive oil or cooking oil for your choice
Step 1
Place the beef and consomé beef broth into a small sauce pan, add ¼ cup of water, cover and cook for 5-7 minutes on medium-heat, until the meat is warmed through. Strain the beef out of the consomé. Reserve the consomé and keep warm for serving.
Step 2
Pour a few tablespoons of the consomé onto a plate or a wide bowl for coating the tortillas.
Step 3
To make the quesabirria, heat a large frying pan to medium-high heat, and add a small splash of oil. Take a tortilla and dip one side into the consomé, then place it dip-side down into the frying pan. Sprinkle half of the tortilla with cheese, 2 generous spoonfuls of beef, and fold the tortilla in half, in the same manner as making a quesadilla. After 2-3 minutes, when the tortilla bottom is crispy and cheese is melted, flip the tortilla over to crisp the other side. Repeat this process with the remainder of tortillas.
Step 4
While the remaining tortillas are cooking, chop your cilantro and slice your lime into wedges. When the quesabirrias are ready, serve immediately with the warm consomé for dipping and the cilantro and lime to garnish.
