Run by the Kitani family, their process involves pristine ingredients like locally grown soybeans and wheat, combined with clear spring water sourced directly from a nearby mountain. The result is a moromi aged for two years in cedar barrels, culminating in a soy sauce so esteemed it's presented to the Emperor of Japan annually.
