Yamaki Jozo
Kamikawa, Japan
Since 1902, Yamaki Jozo has been crafting soy sauce with a commitment to tradition and quality. Run by the Kitani family, their process involves pristine ingredients like locally grown soybeans and wheat, combined with clear spring water sourced directly from a nearby mountain. The result is a moromi aged for two years in cedar barrels, culminating in a soy sauce so esteemed it's presented to the Emperor of Japan annually.
