Once landed at the ports of Ondarroa, Lekeitio, and Getaria, only the freshest catch is selected at local fish markets. Within hours, the fish arrive at Olasagasti’s nearby facility, where skilled artisans clean, cook, and hand-pack each fillet using techniques passed down through generations.
