In 2013, Nialls embarked on a mission to source superior tinned seafood, dissatisfied with the available options. He forged direct relationships with domestic and international canneries, hand-selecting the finest fish for his East Village seafood bar. This initiative laid the groundwork for Minnow, officially launched in 2021. Leveraging their extensive restaurant experience and robust supplier connections, they focus on curating the best seafood preserved at peak freshness.
