Filet mignon, cut from the tenderloin, is prized for its tenderness, but not always for it's robust flavor. This grass-fed Longhorn beef filet, however, combines the 'cut it with a butter knife' texture you'd expect with enough flavor it makes heavy, rich sauces feel like gilding the lily.
Twisted Horn Longhorn cattle live and graze in open pastures in Petaluma. Grass-fed Longhorn beef is very lean and cooks 30-40% more quickly than other breeds.
All of our beef is grass fed, grass finished and is dry aged 21 - 28 days for maximum flavor and tenderness.
