Longhorn cattle are leaner than other beef breeds and being young when they come into the production channel do not yield the huge fatty briskets that you may be used to seeing. Those usually come from much older animals and grow even larger and fattier in grain/corn-fed animals. Our longhorn briskets have much flavor though and we have simply grilled ours with great results. We would love to how you prepare yours. Smoked? Corned? Pastrami? Let us know!
