Also known as the butcher's steak since it was not usually available for sale. A smaller steak cut from the plate, hanger is full of rich, beefy flavor. There is only ever one or two of these steaks hanging around ;-) and you rarely find them available for sale. Treat the hanger similar to the skirt steak!
