St. Benoit Creamery uses wholesome pasture-fed organic cow's milk from John Mattos’ family farm in Two Rock (near Petaluma) in Sonoma county. Additionally, their Jersey cows are A2 cows, meaning that they only contain the A2 beta casein protein that is easily absorbed and digested in the human body, whereas most cows found in the US contain the A1 protein that cause indigestion and allergies. They source local jams for our fruit-at-the-bottom flavors, coming from farms in Sonoma county that grow the fruit organically and make the jam by hand. The yogurt culture comes from France where it has been used for decades to produce sweet, mild and smooth yogurts. Unlike most producers, they add no thickeners, stabilizers or preservatives. Just milk and culture, that’s it!
