Sonoma County Meat Co.'s Pork Heart comes from Mountain View's sustainably-raised and vegetarian-fed, antibiotic- and hormone-free heritage breed hogs. Heart is a lean muscle with a nice fat cap, and tastes more like lean pork than it does like most other organ meats (think kidney or liver). To avoid toughness, cook it fast on the grill or in a hot pan, or very slowly, in a braise or roast.
