Filet Mignon Tail is just the narrow end of an entire filet mignon—if you've seen an entire filet mignon neatly tied up with string, this is the piece that is usually folded under to create an even thickness along the whole filet. It's an ultra-tender, flavorful, premium cut that cooks up in a flash, so keep it simple!

Twisted Horn Longhorn cattle live and graze in open pastures in Petaluma. Grass-fed Longhorn beef is very lean and cooks 30-40% more quickly than other breeds.
All of our beef is grass fed, grass finished and is dry aged 21 - 28 days for maximum flavor and tenderness.
