This cut comes from the flank and is best when marinated, cooked quickly over high heat and sliced thinly against grain. While skirt steak is the perfect addition to anything from salads to tacos, it's delicious enough to wow all on its own. 

Twisted Horn's Longhorn cattle live and graze on open pastures in Petaluma. Grass-fed Longhorn beef is very lean and cooks 30-40% more quickly than other breeds.

All of our beef is grass fed, grass finished and is dry aged 21 - 28 days for maximum flavor and tenderness.
