Atika is a blend of sheep and goat milk in roughly equal parts, this 3- to 4-pound tomme smells like warm melted butter and crème fraiche. The rind is hard, dry and deeply marked by the draining basket. The firm, dry paste has numerous small openings, and the flavor is buttery and tart. - review by Janet Fletcher.
Atika is aged between 3 and 6 months. This a farmstead cheese, the goats and sheep are raised and milked on the same farm that the cheese is made thus the milk is as fresh as it can possibly be. Pairs well with local, crisp apples.
Atika was a 2014 Good Food Award winner. This award means a great deal to us since it is judging on both taste and the overall sustainability of our farm and creamery. This is to say how we treat the land, animals, people and food! This cheese also won a 2nd place ribbon in its class in 2014 at the American Cheese Society conference.
