You'll never know this ravioli is vegan...stuffed with artichokes, spinach and herby breadcrumbs. Delicately wrapped in eggless sweet red pepper pasta, this ravioli is both nutritional and beautiful!
Bring 3 quarts water to a rolling boil, add salt (optional), add pasta, stir, reduce heat. Simmer ravioli 5-7 minutes. Do not boil.
Great tossed with sautéed greens and your favorite extra virgin olive oil. Add sweet Italian sausage for meat eaters.
