Griffin

Named after the owner's third son, Griffin is farm-styled raw cow's milk cheese soaked in a half barrel of terminus porter from Gate City Brewing Company. It is aged for 120 days, creating a crumbly texture and an umami, nutty flavor. It is recommended to be paired with Syrah or Rhone wine blends or Porter if drinking a beer.
