Did you know Good Eggs buys 1 or 2 pasture raised whole hogs every week from SCMCo? Sometimes we offer fresh pork belly in our marketplace, but sometimes we have them keep the bellies for an extra couple weeks so they can turn them into this awesome bacon for us.
Handcrafted with maple sugar in small batches, this bacon is a personal favorite, not just because of the flavor but because it is sliced reasonably thick and retains some chew and texture after being crisped up in the skillet (cast iron, start it cold, flip once).
Ingredients: Pasture Raised Pork, Water, Sugar, Sea Salt, Maple Sugar, Spices, Sodium Erythorbate, Sodium Nitrite.
