In Italian orzo means barley. Shaped like a large grain of rice, this form of short-cut pasta is incredibly versatile. Traditionally added to soups and stews, it also makes an exception base for a chilled pilaf-style salad. Whether you’re looking for a picnic ready dish or a simple side to accompany roast port or chicken, try combining with feta, sun-dried tomatoes, fresh herbs, and a lemony vinaigrette for an easy dish that you can prepare ahead.

Recommended Preparation—Bring a large pot of salted water to a rolling boil. Cook the pasta for the recommended 10 minutes, stirring occasionally. Drain thoroughly and rinse with cold water to stop cooking. Alternatively, and for a better result, drain the pasta a minute before and finish cooking in a pan together with sauce.
