Cut from the chuck, Flat Iron Steak is quick-cooking, nicely marbled and packed with flavor. It turns out perfectly with just salt, pepper and a few minutes each side on the grill (or in a cast-iron pan). Let it rest for 10 minutes, then slice thinly against the grain.
