These grass-fed, pastured lambs are able to grow slowly and naturally, without antibiotics or hormones. Lamb top sirloin is a hard-to-find cut, incredibly versatile and delicious. Sear it quickly like a steak, or truss it, rub it with savory herbs like ras el hanout and roast it slowly to medium-rare. We like to plan on having leftovers for lamb sandwiches the next day!
