These traditional fresh udon noodles are handmade in small batches right here in the Bay Area. Starting with a specially formulated high-gluten flour, the labor intensive process results in an incredibly elastic dough that offers a satisfying chew. Forget limp or soggy noodles--the bouncy texture and clean flavor of this udon makes for an incredibly versatile product. Great paired with broth, in stir fries, and yes, even with Italian-style meatballs!
Basic Preparation: Cook noodles for 4 minutes 30 seconds in large pot at continuous boil. Strain noodles and shock in ice cold water to stop cooking. Serve with your choice of broth/sauce and toppings. Note: noodles should still be boiled before stir frying or making noodle soup.
