“Without question my favorite part of sourcing at Good Eggs is the ability to support passionate upstart local producers like Ben and Matt. I can’t say it enough: their noodles are a game changer and wholly deserving of a spot in your regular meal routine. Just be careful or you might eat half the package straight from the colander like I did the first time. Give ‘em a try, get inventive, and let us know what you think!” Corey, Good Eggs Buyer
These traditional fresh udon noodles are handmade in small batches right here in the Bay Area. Starting with a specially formulated high-gluten flour, the labor intensive process results in an incredibly elastic dough that offers a satisfying chew. Forget limp or soggy noodles--the bouncy texture and clean flavor of this udon makes for an incredibly versatile product. Great paired with broth, in stir fries, and yes, even with Italian-style meatballs!
Basic Preparation: Cook noodles for 4 minutes 30 seconds in large pot at continuous boil. Strain noodles and shock in ice cold water to stop cooking. Serve with your choice of broth/sauce and toppings. Note: noodles should still be boiled before stir frying or making noodle soup.
