Xisto Ilimitado

Xisto Ilimitado is a Portuguese analog to the idea of a “village” level Burgundy. A field blend of 6 Portuguese native varietals, Ilimitado is Luis' homage to the schist-driven terroir in the appellation. Bright garnet in color, this wine has bright red and blue fruit aromas, with notes of shist, flint, and violets. On the palate, is fresh and ripe notes of red cherry and pomegranate fruit up front, with white pepper, slate and herbal aromas adding complexity before bright acidity balances and dries the finish. Pair with game meats, roasted pork, or ratatouille.
