These early season Pea Greens are sweet and tender. They taste just like the pods or peas themselves, but a bit grassier. Sauté them quickly with some Green Garlic and Spring Onions and salt to taste. Pea Greens are also delicious coarsely chopped into a raw salad.
From time to time, Rick Knoll will harvest his Pea Greens in their flowering stage, and you can occasionally see baby peas just beginning to form from the edible flower!
