We selected this washed Ethiopian Yirgacheffe coffee for its delicate, well-defined profile, beautiful floral aromas and vibrant citrus acidity. (Also because it's our favorite coffee region.) Red honey sweetness accentuates flavors of sweet lime and mandarin orange, resulting in a light (but strong), refreshing cold brew coffee. We roast this delicate coffee very lightly to preserve those lively, bright flavors. Because you wouldn't order Filet Mignon well done.
