Little known secret: if you let Cilantro bolt and flower, eventually it'll produce seeds, which we call Coriander. If you cut the Cilantro plant before it seeds out, you can eat the mild and sweet flowers and fine, ferned-out leaves. They impart both beauty and the flavor of cilantro into salads, tacos, and even desserts.
