Cowgirl Creamery's  winter seasonal cheese, Devil's Gulch, starts with organic Jersey milk from John Taverna's Chileno Valley Dairy. The rich, bloomy rind wheels are spritzed with Quady Winery's Muscat wine and dusted with a mixture of sweet and spicy ground heirloom peppers from Allstar Organics. The cheese offers a bright, sweet spiciness tempered by the rich creaminess of the paste.

Devil's Gulch is named for a narrow ravine carved along the base of Mt. Barnaby, just down the road from the Allstar Organic Farm in Marin County.

Ingredients: Organic pasteurized milk, organic dried peppers, salt, wine, cultures, and enzymes.
