This fluffy, decadent ricotta is reminiscent of homemade marshmallows or a meringue. In order to ensure that there is no waste at Bellwether, they mix the drained off whey from the production of their harder cheeses and fresh sheep's milk. It is soft and light. Because of it's rich texture we suggest using it as a perfect substitute for cream cheese, creme fraiche, or fromage blanc! Or just open up the package, add some honey, grab a spoon, and dig in!
