This is a very special variety of Plum. The Elephant Heart Plum has a grey-pink skin color, with a dark ruby red flesh. The meat is juicy, sweet, and has complex flavor overtones of vanilla and tart berry. The Elephant Heart Plum was developed in Sonoma County by Luther Burbank from his collection of Japanese plums in 1929. The Elephant Heart grows primarily in the California region of the US.
