A South India style fresh tasting curry spice rub with authentic flavor is tailored from my family recipe. It pairs well with roasting both meat and vegetable.
Rub meat with generous amount of spice rub, olive oil, and lemon juice. Marinate in refrigerator for 30mins. Roast, grill, or barbeque until the meat is cooked. Serve with rice, bread, or paratha and Akka's mango chutney on the side.
Coat chopped vegetables like potato, sweet potato, carrots, shallots, celery stick with the spice rub and olive oil mixture. Roast until cooked. Separately, make or heat tomato sauce on a skillet along with some spice rub. Transfer vegetable to the skillet and mix well. Serve with rice, chapathi, or paratha and Akka's Meyer lemon relish on the side. Mixing with tomato sauce is optional.
