
Sebastien David
Sebastien David is a trailblazing natural winemaker in Saint-Nicolas-de-Bourgueil, where his family has grown vines for generations. After studying enology and working abroad, Sebastien returned home in 1998 to take over the family estate, converting it to organic farming and producing his first vintage the following year. Inspired by mentors like Françoise Foucault of Clos Rougeard and Marc Tempé of Alsace, Sebastien embraced biodynamic practices by 2004 and achieved certification a decade later.
David is known for his experimental, forward-thinking approach to viticulture. He avoids plowing to protect the microbial life in his soils, instead using a unique “Rolofaca” tool to fold weeds into a natural mulch that retains moisture and nurtures biodiversity. His vines coexist with trees, and he relies on herbal teas and minimal copper treatments—among the lowest in the Loire Valley—to support vine health.
In the cellar, Sebastien lets nature lead. His wines ferment in an old subterranean mushroom cave, where the cool, consistent temperature of 54.3°F allows for long fermentations without intervention. Using amphorae and concrete eggs, he achieves gentle lees circulation and depth of character. With nothing added or removed, Sebastien’s wines are vivid reflections of the land, made with precision, curiosity, and a commitment to low-impact, high-integrity winemaking.
