In 2007, Sebastien took over his father’s vines and bought a 16th century mushroom farm to age his wines in galleries in Tuffeau. The vines have been around for the past century and winemaking has continued for multiple generations in the same family. The climate and mineral content of the soil help to create one of the best environments for Chenin Blanc-based white and sparkling wines. Choosing organic farming was an easy decision as all of their vines can be found without weedkillers or pesticides. The soils are worked mechanically while the grapes are harvested by hand.
