Keta, also known as chum salmon, are typically harvested for their roe when the fish is close to spawning and the flesh has deteriorated. We harvest our chum salmon early in the run when the flesh is bright and vibrant. We use this fish to make spreads, add to soups, salads, and sandwiches or put it on the grill with a marinade.
