At the heart of every Pacha loaf is organic buckwheat, a naturally gluten-free seed chosen for its hearty flavor, impressive nutritional profile, and important role in regenerative agriculture. As a cover crop, buckwheat helps improve soil health by reducing erosion, increasing biodiversity through its abundant flowers, and naturally suppressing weeds, allowing farmers to reduce pesticide use. Pacha further supports regenerative farming by donating a portion of its sales to organizations working to expand regenerative organic agriculture.
Every loaf is handcrafted in the company's certified organic and certified gluten-free facility in Vista, California, using a meticulous three-day process that begins with whole buckwheat seeds. The seeds are soaked to initiate sprouting and reduce naturally occurring anti-nutrients before being blended with simple ingredients and naturally fermented using wild yeast found on the seeds themselves. The batter is then carefully baked, vacuum sealed in home-compostable packaging, and shipped in post-consumer recycled cardboard, reflecting the company's commitment to both quality and sustainability.

The company operates a certified organic and gluten-free production facility that meets rigorous certification standards while prioritizing environmentally friendly practices, including 100% home-compostable packaging to help reduce plastic waste.
