This delicious fresh shelling bean, also known as Italian Butter Beans, have an amazingly buttery texture and a sweet flavor. They're delicious slowly braised in olive oil and garlic or boiled to perfection (and because they're fresh, they don't need to be soaked overnight in water). They can upset your stomach if eaten raw, so only eat them cooked!
Please note: the shells (pods) of these beans range from green to yellow (or even sometimes brown), but this exterior color only means that the beans have ripened up to their fullest and buttery-est potential.
