Founded in 1992, Moonlight Brewing is committed to creating beers that honor traditional craftsmanship while embracing creativity. Using single-step infusion mashes and copper kettle boiling, the brewery produces Continental, British, and post-modern American styles. Each beer begins with carefully chosen water, malts, and hops—sourced from across North America and Europe—to highlight its unique character, with seasonal ingredients like redwood branch tips, cedar, fruit, and herbs adding distinctive layers of flavor.
Fermentation takes place in conical tanks with the brewery’s house ale and lager yeasts, while select saisons are added in summer. After fermentation, beers age in cold-cellar tanks for at least a month, allowing flavors to develop fully. Moonlight Brewing emphasizes hands-on craftsmanship, relying on the senses of sight, smell, and taste rather than automation, ensuring every batch meets their high standards.
