Step 1
If you have a zester or microplane, zest the lemon, avoiding the white pith. Cut the lemon in half and squeeze out the juice into a small bowl (you should have 3 to 4 tablespoons).
Step 2
Add the ricotta to a food processor with the lemon zest, if using, lemon juice, and 1 teaspoon of salt. Pulse 2 or 3 times to combine. Once combined, with the food processor running, stream in 1½ teaspoons of olive oil.
Step 3
Place the dip into a small serving bowl and drizzle with 3 tablespoons of the Momofuku Chili Crunch. Serve with the crackers for dipping.
