Enjoy a Bo Ssäm experience at home with this complete Momofuku Bo Ssam short rib meal. 

We worked with the culinary team at Momofuku to create a tender and rich Honey Chili Beef Short Rib, starting with Black Angus natural beef, which is marinated for 24 hours and then slowly braised, resulting in a tender, lean, and easily shreddable piece of meat. This luxe short rib is then glazed in Honey Chili sauce, which gets its irresistible flavor from soy sauce, honey, ginger, garlic, and chili crunch - making it the sweet, spicy, umami-rich sauce that once you taste you will crave! All you have to do for the full Bo SSäm experience is reheat your meat in the oven and coat it with the Honey Chili glaze. 

To enjoy this Bo Ssäm-style meal, pile lean short-rib meat and fluffy coconut rice into crisp lettuce cups. Top with ginger scallion sauce, Ssam sauce, and kimchi to customize your lettuce wrap.

Reheat / Serving instructions:  

  1. Remove honey chili sauce from the alloy tray, add the jus to the bottom of the tray, and cover tightly with aluminum foil. Alternatively, if you do not have foil, place in an oven-safe pot or dish and cover with a tight lid. 
  2. Place the tray in a 325°F oven for 20-22 minutes until the meat is very tender and reaches an internal temperature of 165°F.  Drizzle with Honey Chili sauce or serve on the side. 
  3. While the meat is reheating, prepare the coconut rice. Place 2 tablespoons of water in the container, and place the lid back on partially to cover loosely. Microwave on high for 2-3 minutes. Let sit an additional 3 mins before removing the lid to serve. 
  4. Separate the butter lettuce leaves from the heads of lettuce, wash and pat dry.
  5. When ready to serve, set out the Ginger Scallion Sauce, the Ssam Sauce, and the kimchi. Serve the warmed short rib meat and rice, alongside the lettuce leaves to make lettuce wraps.
