Lil Bucks

Chicago, IL

Lil Bucks began with a single, unforgettable crunch. In 2016, founder Emily discovered sprouted buckwheat seeds atop an açaí bowl at a beachside café in Sydney, Australia—and instantly fell in love. The clean energy, satisfying crunch, and soil-friendly crop sparked a “buck-wild” obsession that led her to bring buckwheat home and reimagine it for American kitchens.

What started as a side hustle debuted in 2018 at a Chicago fitness festival and quickly grew into a national brand, earning Whole Foods launches, weathering pandemic pivots, and expanding into new product lines. Sprouted buckwheat stood out not just for its taste, but for how it made people feel—providing steady energy without the crash, while being naturally grain-free, gluten-free, and nut-free. Emily’s vision was bold: to create the “Quaker Oats of Buckwheat” in the U.S.

Today, Lil Bucks is as committed to soil health as it is to snacking. The brand partners with American farmers, including regenerative pioneers, to grow buckwheat in ways that restore soil, support biodiversity, and strengthen the food system. By building the first Regenerative Organic Certified® buckwheat supply chain in the U.S., Lil Bucks proves that better snacks start with better soil—and that a great crunch really can change everything.
