We use an extremely minimal amount of organic sugar, organic lemon juice, no pectin, and cook an average of eight jars per pot. Our conserves are made with fresh, sustainably and locally grown, ripe fruit, most of which is organic. All of the preparation, cooking, jarring, and labeling with letterpress labels is done by hand and we cook 8 jars per pot.
