Tradition defines our style of hand made preserves and fruit confections.
A modern sensibility informs the use of a minimal amount of organic sugar, no pectin, and the inclusion of flowers and herbs grown in the Still-Room kitchen garden. Everything is stovetop cooked in small batches, resulting in preserves that are vibrant and deeply concentrated in flavor.
We support our local community of small family famers whose growing practices are organic and sustainable, and who provide us with exceptional quality tree ripened fruit.
We seek out and revive heirloom and now forgotten fruits and endeavor to use all parts of the fruit to minimize waste. Foraging in our urban backyard provides our link to the bounty in nature surrounding us.
