Journeyman Meat Co. uses traditionally cured hams from heritage breed, GMO-free, pasture-raised pork. The ham is placed in a brine, then smoked using a five-stage process with 100% natural smoke from real hardwood chips and from wine barrel staves that aged some of Sonoma County's finest pinot noirs, and hand-tied to perfection. This results in a sweet, smoky, and savory goodness enough to feed everyone on the table and makes for great holiday centerpiece.
