Inspired by their excitement that a good life should be delicious, Lacy and Jan dreamed up the idea for Happy Campers in a college dorm room. Since having received their diagnoses of gluten intolerance, they became increasingly passionate about good health and great food to fuel their active lifestyle. Noting the lack of reasonable gluten-free options available, they set on a mission to end the quest for deliciously nutritious gluten-free bread. From ‘breadgineering’ the perfect combination of wholesome ingredients and tastiness in their home kitchen, they began selling their loaves at local farmers' markets. The breads soon became so overwhelmingly popular that customers demanded them at their favorite stores. Immediately after graduating in 2011, Lacy and Jan moved to Portland and into their own dedicated gluten-free bakery, where they’ve been cheerfully making their bread ever since.
