This incredibly flavorful Heritage boneless pork loin roast is seasoned with crushed garlic, lemon zest, toasted fennel and fresh rosemary.
To prepare, rub the roast with a tablespoon of olive oil. Position the roast in a pan fitted with a rack and place in a preheated 375 degree oven for 45 minutes or until a meat thermometer inserted into the middle of the roast registers 140 degrees. If the porchetta starts getting too brown turn the oven down to 325. Let the roast rest for 10 minutes while you assembe the rest of your meal, then slice thinly across the grain and plate. Pour any accumulated juices over each plate. Leftovers make the best sandwich you’ll ever eat. Serves 4 adults.
