Spinach Seedlings are easy and quick to grow, ready to be harvested in just 4-6 weeks. Keep soil constantly moist, by watering regularly and mulching. When seedlings sprout past 2", thin them to 3-4" apart. Harvest outer leaves when they reach the desired size, or harvest the entire plant, cutting the stem at the base.
