Suspended within are two elegant inserts: a tart pineapple panna cotta and a floral rose hip panna cotta — their contrasting flavors dancing in harmony inside the mousse. Beneath it all lies a soft brown sugar genoise, resting on a crisp brown sugar sablé for the perfect textural finish. Glazed with a tea-infused brown sugar glaze, this dessert bridges the comforting sweetness of boba with the sophistication of modern French pastry.
