Charcutnuvo is a Colorado-based sausage company with deep European roots and a bold vision for the future of meat. It all started in 1969 when Swiss immigrant Ted Jaeggi opened Continental Sausage in Denver, bringing old-world flavors and techniques to the Rocky Mountains. In the mid-1970s, the Gutknecht family—also Swiss and steeped in four generations of sausage-making—joined the operation. Eric Gutknecht, now at the helm, literally grew up in the business, learning the trade as a child alongside his parents.
A world-ranked triathlete and devoted father, Eric eventually returned to the family business with a new passion: clean, natural, better-for-you meat. Under his leadership, Charcutnuvo (rebranded from Continental Sausage) evolved into a forward-thinking, all-natural brand focused on humane practices, organic ingredients, and regenerative agriculture.
