Andante Dairy's Duet is a an ode to the intermingling of goat's milk and thyme. They take thyme and steep it in a small amount of warm goat's milk, and then add the infusion to a vat of goat's milk used to make this cheese. The cheese itself has a tangy aroma akin to creme fraiche. While there may be a hint of flavor from the thyme, it is just that, with tart and tangy flavors being the more assertive character, with a lush and creamy texture. Pair with Sauvignon Blanc or a crisp Pilsner.
