Giusti
Founded in 1605 in the heart of Modena, Italy, Acetaia Giusti is the oldest producer of balsamic vinegar in the world. For over four centuries and 17 generations, the Giusti family has preserved the heritage of authentic Modenese balsamic, passing down artisanal know-how and cherished family recipes. Their long-standing dedication to the craft has earned them widespread historical acclaim, including 14 gold medals at World Exhibitions and the prestigious Coat of Arms from the King of Italy in the late 1800s.
At the core of Giusti’s exceptional quality is their patient, time-honored aging process. Using only carefully selected local grapes, the grape must is slowly cooked and then aged in an extraordinary collection of ancient wooden barrels—some dating back to the 1700s. As the vinegar ages across casks of different woods like oak, cherry, chestnut, and juniper, it develops Giusti's signature rich complexity, velvety texture, and perfect harmony of sweet and sour notes.
Whether whisked into an everyday vinaigrette, drizzled over fresh strawberries and aged Parmigiano-Reggiano, or used as a luxurious finishing touch for roasted meats, Giusti vinegars bring an unparalleled depth of flavor to the kitchen. Choosing Giusti means bringing a true piece of Italian culinary history to your table.
