Inspired by Dolce and Sofia, the affable miniature Sicilian donkeys, it undergoes a native yeast fermentation and is left on the skins for five days. Afterward, it's pressed to finish fermentation and aged in neutral French barrels. The result is a uniquely hued wine that falls somewhere between an orange wine and a rosé, offering a fun and fresh profile with lingering savory notes. With an alcohol content of 12.2%, only 400 cases were crafted. Ingredients: Grapes, SO2.
