Preparation: With a knife or scissors, remove plastic casing and clips from the thawed roast. Place on a pan in foil. Pour half of your basting liquid (veggie broth or red wine work wonderfully) over the roast. Cover and cook at 350°F for 2 hour 20 minutes, then uncover, pour remaining basting liquid over the top, and cook uncovered for 15 more minutes. For the neatest slices, use a serrated knife to carve.
